Tea from a nature reserve in the central part of Taiwan, Chiayi County, Ali Shan tea farm. Named after the Ali mountain peaks, it is harvested at an altitude of at least 1,350 m. Medium-sized spherically twisted flushes of all shades of green with tiny yellowish stalks. When warmed by breath, a pleasant sweet and sour aroma of baked apple. Water within 90 °. After the first infusion, warm gingerbread notes appeared in the aroma. The infusion is oily, thick, amber-colored. The taste has a sourness of green apple, bergamot, orange peel and tea rose. The sweetness of red apple, pastry, dried apricots and vanilla. The aftertaste is sweet and sour with a hint of charlotte. In the tea bottom, we find already opened flushes with an elastic, fleshy leaf with mineral damage. The heating and processing of the leaf was very delicate and perfectly selected by the master, which allowed the tea to be revealed from its best side.
